What you will need:
6 rice sheets of rice paper
12 large prawns *Vegetarian option: tempeh works as a nice alternative to prawns here.
1 carrot, julienned
½ red pepper, julienned
¼ cucumber, julienned
handful of lettuce
handful of cilantro, chopped
What to do:
Soften rice paper by dipping in hot water for 10-15 seconds. Spread out on a clean plate or clean counter space, wait a few seconds – the rice paper will become more pliable.
Add a small amount of each ingredient to the center of each wrap (2 prawns, 3 strips of carrot, a pinch of cilantro etc.) Be careful not to add too much or they will be very difficult to wrap up.
Fold up like a wrap, nice and tight to avoid spillage.
Optional Dipping Sauce
3 tbsp natural peanut butter
1 tbsp fresh ginger, minced
1 clove of garlic, minced
Combine in a small blender, or mix really well with fork.
In a small sauce pan (or microwave) combine ingredients and heat until warmed.
