Quinoa Pizza Bites. Yep, That’s Right.

Just because you choose to eat healthily doesn’t mean you have to sacrifice all things delicious. In fact good-for-you-food can be just as tasty as the not-so-good-for-you stuff. Case and point:

Quinoa Pizza Bites

What You Need:

1 cup quinoa, cooked

½ cup cheese, shredded

2 tbsp. parmesan cheese

2 tbsp. red pepper, minced

¼ cup red onion, minced

¼ cup spinach, chopped

1 small tomato, chopped

1 clove garlic, minced

1 egg

1tsp. each, basil, oregano, thyme

Salt and pepper to taste.

 

What You Do:

Preheat oven to 350 degrees C.

Sauté onion, garlic, red pepper and spinach with spices until soft.

Mix all ingredients together.  Scoop mix into very well-greased mini muffin cups.

Bake for 15 minutes.

Let cool for 5 minutes before you remove from pan.  (Can be served with tomato sauce as a dip if you like)
