I’m Thankful For Thanksgiving (And Apple Pie)

Grain-Free Apple Pie, because I love you.

Crust – What You Need:
3 Eggs
1/2 cup melted coconut oil
pinch of salt
3T melted honey
½ cup tapioca flour
½ cup + 1T coconut flour

What You Do:
Preheat oven to 350. In a mixer combine eggs, oil, salt and honey. Beat for 30 seconds or so, to mix well.  Add in flour and mix with a fork into a dough-like consistency.  Divide mix into two. Spread one into a pie pan making sure to spread thinly and evenly. This dough rises so make sure to spread quite thin.

Roll out the remaining dough and slice in strips to place on top later.

Bake in oven for 7-9 minutes or until golden brown on the edges.

Pie Filling-What You Need:
3 Medium apples, peeled, cored and sliced
¼ cup raisins
1T Cinnamon
2t nutmeg
2t cloves
1t vanilla extract
3T Honey
1T Melted coconut oil

What You Do:

In a large bowl combine cinnamon, nutmeg, cloves and raisins. Stir in oil, honey and vanilla extract. Finally toss in the apples and mix well.

Feel free to add in more honey if you like a little sweeter.

Spread apple mix out on pie crust.

Bake for 15 minutes. Remove from oven and top with strips of uncooked pie crust diagonally and then again horizontally. Place back in the oven for another 10 minutes or until apples are nicely soft.
