Baked Chicken With Pineapple Salsa

4 boneless chicken breast- with or without skin

1/4 cup pineapple juice

1 tbsp yellow mustard

salt & pepper to taste

3/4 cup fresh pineapple- cut into small chunks

1/4 red pepper, finely diced

2 tbsp red onion finely chopped

2 tbsp chopped up jalapeno- the canned sliced kind

1/2 avocado

4 tbsp fresh cilantro

juice from 1/2  a lime

salt & pepper to taste


Preheat oven to 450. in sauce pan boil pineapple & mustard for about 1 min or until slightly thickened.

Place chicken on baking dish, and brush on the sauce. Bake for 20 minutes (this is a minimum, may require longer if you have thick pieces).Brush again with more glaze, and broil for about 10 minutes. Making sure to watch closely so it doesn’t burn. Let rest for 5 minutes before you serve.

Meanwhile, toss together pineapple, onion, red onion, red pepper, jalapeno, cilantro, avocado, juice from lime and salt & pepper to taste.

Serve the salsa over the chicken
